What computer vision engineers actually do
They build systems that extract meaning from images and video: object detection, classification, segmentation, quality inspection on a production line, document understanding. The modelling is often the smaller half. The larger half is the data pipeline, the annotation strategy and getting inference to run fast enough on the hardware you actually have.
Where projects usually fail
Almost never on model architecture. They fail because the training images came from good lighting and the real camera does not have it, or because a model that works on a server cannot run on a device at the edge.
